What’s the difference between:
周一 and 星期一
As far as I know, those expressions mean “Monday”.
But I don’t really understand where should I use them or what are the main differences between them.

That’s a good question! You’re right, 周一 and 星期一 both mean “Monday” and they can be used interchangeably. However, 星期 is more commonly used and more colloquial, while 周 is more formal. But that’s their only difference.
